Happy Easter Eve/Passover!

I hope everyone is having fun this weekend, whether celebrating the above holidays or just enjoying life.

I made vegan carrot cake cupcakes to bring to my boyfriend’s aunts house tomorrow. I snuck one already and it was delicious! All I did was get a vegan carrot cake mix, added12 oz. of ginger ale, mixed and baked! I got another cake mix in case this one didn’t turn out, so now I can make one all for myself. I just went out and bought regular vegan frosting. It works.

Switch up!

I switched up what I was eating…again. I decided it would be fun to have something different for the next few weeks (and lose this winter weight because DAMN!!)

From Monday through Thursday, I have school, so I tend to get quick and easy but nutritious. For breakfast, I am eating cereal, a banana and a cup of soy yogurt. For lunch, I have chickpea salad on flatbread, carrot sticks and an apple for lunch. For dinner, I have a stir-fry complete with tofu, veg, rice and some peanut sauce.

For Friday-Sunday, I have more time to cook, so I can have more fun! For breakfast, I make “scrambled eggs” with peppers (pic on my Insta veggiesweetheart), potato and an apple. For lunch, I have lentils cooked in taco seasoning, rice, corn and an apple. For dinner, I have grilled mushrooms, fried cabbage and pierogies.

And that’s the fun I’ve had this week.

I haven’t vlogged in a minute. I will do one next week!

Last Sunday, the boy and I went to Olive Garden and had dinner. I had linguine pasta and marinara sauce, salad and breadsticks. It was delicious!

I need to get my diet in a little better shape. I know these past few weeks have been fun (aka not too much on the healthy side) but now I have to scale it back a bit and find healthier alternatives to what I have been eating.

Hey All!!

Some fun stuff happened this week!!

I stumbled across some vegan pierogies at Aldi’s. I fried those up and, in a separate pan, fried up some cabbage. OMG. It’s my new favorite comfort meal. It was great!

I went to a restaurant in Akron and got their veggie burger. It said on the menu that it was a black bean burger, but it showed up green. Whatever. It was massive and it was good! I don’t care that it fell apart on me, I ate it anyway!

Last night, my dad’s wife made me some vegan stuffed cabbage. They were delicious!

Can you tell I’m hungry?

There’s a grocery store near me that accidentally makes their hot cross buns vegan. I found this out last year and I am buying them up like crazy this year. I even had a dream about them last night. Thank God they are only seasonal!

I went to a brewery in Cleveland this past Wednesday and they had some good vegan beer!

I need to get some pierogies. Or I guess I could make some.
