Interviews and Other Things

It’s been really quiet the past week. I have been making black beans and rice along with spaghetti and marinara sauce for a while.
I had an open interview with a specialty grocery store today. I think I need to brush up on my interviewing skills.

A Very Good Morning to Me!

I found this french toast recipe online and I tried it this morning. I added nutmeg and cardamom to the batter. Yes, it’s a Vegan Gains video who got it from Holly Brown’s Fit channel. Just drool over the video and make this deliciousness for yourself. https://youtu.be/8SvLsB90RwE

Homemade Chipotle

I had Chipotle yesterday and I wanted it today, so I made cilantro lime rice, black beans with lime juice, pan fried some peppers and onions, and bought all my salsas, guac, daiya cheese and lettuce to put on top of it. That was my big culinary feat of the week.

Crazy Day of Cooking!!!

I decided to get off my butt and do some real cooking today, which was therapeutic.  I haven’t had a good past few days, so it was nice to do something I enjoy.
For lunch, I made some vegan fried chicken. I defrosted Gardein chicken scallopini and wrapped it in spring roll wrappers. I then dredged that in bread crumbs and seasoning, and fried it. It came out pretty damned tasty!
Tonight for dinner, I made lentil pasta sauce for my spaghetti. I mixed cooked lentils with oregano, thyme, parsley, onion powder, garlic powder,  salt and pepper, Olive oil and one can of condensed tomato soup. Everything was to taste except the lentils and tomato soup. Damned good if you ask me!!

Major News!!

I am going to start a YouTube channel!! I want to get it up and running in January. I feel like that would be enough time to getting everything together and just the way I want it. I am not giving up this blog, so stay with me here!!

I’ve been sick, so it’s been lentil soup and rest for me lately.

Btw, Happy World Vegetarian Day!!
