As I sit here contemplating why I am so hungry after eating an awesome breakfast, I decided to make myself some Indian food. I decided to make some paneer Masala. The recipe follows (and I did wing it, so greatness is not happening too often in this recipe. Play around with it!!)
2tbsp vegan butter
2Tbsp oil. Melt the butter in the oil in a skillet.
Chili garlic paste to your taste. Add to butter but beware that this gets spicier as you cook it.
Tandori spice mix. Add to skillet and stir.
One tomato, sliced and diced. As the tomato cooks, mash it with a potato masher.
Cashew milk. Add to skillet and warm until thickness happens
Vegan block of mozzarella cheese. Cut into chucks and add at the end.
