A Most Refreshing Salad
I don’t know if I have posted this salad before, but it is an awesome thing to eat on a hot day. This is a taste as you go salad. Feel free to omit or add to this.
Cilantro Corn Salad
1can chickpeas
1avocado, mashed
handful of cilantro
thin slice of any onion
1 cup frozen corn
1 cup frozen peas
1/2 red pepper
dash of sugar
salt, garlic powder, pepper, and cumin to taste
Mix and nosh!
One year down…
Yesterday was the one year anniversary of my mother’s passing. I did okay. I had my moments. Now just trying to get through the next year.
In honor of my awesome mother I am doing the things she loved to do: shop and eat out. I am going to Easton today and Northstar for lunch.
