Tofu Potato Casserole and an Awesome App!!

I went grocery shopping on Saturday (you know, before Snow-pocalypse was upon Ohio once again) so I bought some items to make an old favorite of mine that I haven’t veganized: hash brown casserole. It veganized very well!  I even threw in some tofu. I was thinking I would eat this alone, but I decided to turn it into a side dish. Gluttony isnt good.

Hash brown and potato casserole!

1 potato, shredded

1 whole bag of dayia cheese

4 oz. sour cream

splash of soymilk

1/2 block tofu

Mix and bake at 350 degrees until golden brown on top

 

Anyway, I was stalking looking at The Vegan Zombie’s Instagram and they stumbled across an app called “Is It Vegan?” You just scan the UPC with your phone and it will tell you if it is vegan, vegetarian, or not to even touch it. It’s pretty cool. Check it out!
