Cleaning Out The Pantry!

I have so many little bags of beans in my pantry, so I am going to make a soup. I am calling this Garbage Can Soup. Weird name? Maybe, but that is because all these ingredients would be in the garbage can come Saturday. Also, this means you can play around with the ingredients as much as you like.

All the dried beans you need to use up (I had about 2 cups)

2T liquid smoke

1 Veggie bullion cube

1/2 C soup veggies

2-3 C water

1/2 C rice, uncooked

Throw everything in a crock pot and let cook all day. Add more water if needed.

Tomato Soup: My hero

I am giving a huge shout out to tomato soup concentrate. It has gotten me out of so many problems, like when I run out of tomato paste or need to make spaghetti sauce or ketchup. All hail the wonderful tomato soup!!
What I am saying here is that y’all need to buy a can of tomato soup and break open the can when you are having a culinary emergency (or you are poor).

Polar Vortex round 2 hot toddy!

So while we ride another cold streak, that means cold weather. Cold weather means more people are going to be sick. Whether the weather or a bug has you down, here’s a drink for everyone…at least those over 21.

1 shot bourbon
2 tsp. agave nectar
1 tsp lemon juice
Tea bag
Hot water

Put nectar, lemon juice and tea bag into a mug. Fill with hot water and let sit for a minute. Pour in bourbon and serve!

Chickpea Pasta Soup

This sounds basic, but considering I could barely chew last week from a salivary gland infection…yeah. I can chew now, so I will so more heartier foods later.

1 can chickpeas, drained

Lemon pepper seasoning (the equivalent of a ramen flavor packet will do)

Whole grain spaghetti, broken into small pieces

2T veggie oil

3c water

Mash the chickpeas. Add chickpeas, oil, seasoning, and oil into a soup pot. Add water and spaghetti. Cook.

Optional: add some superly chopped vegetables.

Cooking on the B3

So with tuition due, medical bills, and regular bills, I am on the B3: Broke Bitch Budget. So as I am clearing out my pantries to survive, I have decided to do cheap meals that are quick and filling this month.
In honor (?) of this Winter Vortex, i will make a Tofu Paprikash.

1 block extra firm tofu
Mirepoix vegetables, chopped
1/4 c butter
Chopped onion
Sour cream

Fry tofu in pan with butter.Add vegetables and chopped onion. Add salt and paprika. Add sour cream.
