HAPPY 1ST YEAR ANNIVERSARY!

It was one year ago TODAY that this blog was born! Isn’t it still so cute! Anyway, in honor of this occasion, I would like to not only post a pic of my lunch, but give you the scoop on how to make it!

Vegan Philly cheesesteak sandwich! All you need is seitan strips (Westsoy works), salt, pepper, onions and green peppers and soy cheese! First fry up your meat until it is brown. Add your chopped onions and peppers until browned, add cheese and put on a hoagie bun! It is delicious!

Hospitals and Things

Sitting here at UH in Cleveland with my mother. As much as this is not a fun experience, it is something that needs to be done. Oh we’ll.
Anywho, I got a chance to look at the menu (surprise surprise) and over all, the menu is very healthy. I don’t think there’s anything completely vegan. Here’s the big question: do I risk getting shot in the hood for food? Some vegans would say yes. I am going to go down to the cafeteria and ask if they can make a meal just for me. That way if someone shoots me, the police know who it is.

I still love Cleveland. I actually ant wait until I get to come back!

Oh, the irony…

My boyfriend’s birthday was yesterday and I wanted to make him a quick, easy, and tasty dinner. I went to look for a can opener and there was not one in sight. I got frustrated and just made him oven baked French fries for dinner. 😞 At least he got an awesome cake from moi! But as I think about it,y boy only buys fresh fruits and veggies. He has no need for a can opener. I was stupid to assume that he had one. Maybe that should be an eye opener to me.

A Gassy Epic Battle

There a line being drawn in the vegan world. It is pitting father against son, neighbor against neighbor, it is…the battle between canned beans and dried beans.

For some people, the canned beans are more convenience. For some people, dried beans taste better. For those who have drawn their swords, put them back in their sheath. All in all, it doesn’t matter which one you use. You can rinse the canned beans off if you are worried about sodium (or use less salt in your recipe). It can be a pain in the butt to REMEMBER to soak dried beans, but they are just as good as canned.

All in all, I have had different success rates with all kinds of dried beans. I love chickpeas, but I can’t get them to become tender like black beans. Experiment and give me your data!
